Been a While!

I know it's been a while since my last post!  Lots of things going on, trying to find Sean a school for next year and working on my weight loss goal to name a few.

For all who know me, you know of my love of Mexican food.  Ahhhhh...I guess I moved to the right place, huh?

Anyway, I've been trying to find a place to buy the spicy pickled carrots.  You know the ones you get when you eat at a Tex-Mex restaurant in the U.S.  Well, no luck finding a place that sells them so I thought I would try making my own.  Oh man....I hit the jackpot!!  I will never again have to go without my spicy pickled carrots!

I read many recipes and tried one that added sugar, that recipe didn't turn out so on to the next one.  I couldn't find just the right one so I derived my own from several that I read.  If you're interested in making some, here is my recipe:

Zanhorias en Escabeche or Spicy Pickled Carrots

Ingredients:
2 cups sliced carrots (about 1/4" thick)
2 spicy peppers of your choice - sliced with seeds
2 cloves garlic - sliced thin
1 cup White Vinegar
1/2 cup water

  • Bring the vinegar, water, peppers and garlic to a boil.  Boil for 2 minutes.
  • Add the sliced carrots and boil for a few minutes longer to soften the carrots to your liking.
  • Remove from heat, cover with a lid and allow to cool.
  • Once cool, poor everything into an airtight container.
  • Place in refrigerator over night.

You can adjust the heat by adding more or less peppers.  I like mine spicy so I used two tiny peppers.  Yes, the smaller the pepper, the hotter it is!

Enjoy!
Till next time,

Week 1 down and starting Week 2

Week one of my project is done and I have great news!  I lost those two pounds so I reached my goal for week 1!

Anyone out there doing this with me?  If so, what kind of progress did you make?

Christmas is next week!  Is everyone ready?  I'm not, not by a long shot but this is the norm for me every year so it's not stressful to me.

I want to make my helper a really cool cover for her clothes while she is here working.  Does anyone know where I can get free patterns for one?  My helper Hilda gets stuff all over her clothes and she asked me not to make her wear a uniform.  If I can find some funky fabric I think she wouldn't mind wearing a cover just while she's here.  Any ideas would help!

So long for now!
