For all who know me, you know of my love of Mexican food. Ahhhhh...I guess I moved to the right place, huh?
Anyway, I've been trying to find a place to buy the spicy pickled carrots. You know the ones you get when you eat at a Tex-Mex restaurant in the U.S. Well, no luck finding a place that sells them so I thought I would try making my own. Oh man....I hit the jackpot!! I will never again have to go without my spicy pickled carrots!
I read many recipes and tried one that added sugar, that recipe didn't turn out so on to the next one. I couldn't find just the right one so I derived my own from several that I read. If you're interested in making some, here is my recipe:
Zanhorias en Escabeche or Spicy Pickled Carrots
Ingredients:
2 cups sliced carrots (about 1/4" thick)
2 spicy peppers of your choice - sliced with seeds
2 cloves garlic - sliced thin
1 cup White Vinegar
1/2 cup water
- Bring the vinegar, water, peppers and garlic to a boil. Boil for 2 minutes.
- Add the sliced carrots and boil for a few minutes longer to soften the carrots to your liking.
- Remove from heat, cover with a lid and allow to cool.
- Once cool, poor everything into an airtight container.
- Place in refrigerator over night.
You can adjust the heat by adding more or less peppers. I like mine spicy so I used two tiny peppers. Yes, the smaller the pepper, the hotter it is!
